This popular phrase is about embracing and appreciating the simple life, which is the Costa Rican way.  It’s no wonder it is one of the happiest places on earth.   Sandy beaches, lush rainforests, plentiful wildlife, delicious fruits, and amazing local people.  Costa Ricans appreciate the simple things in life and always have a smile to share.  

This Costa Rican salad is simple and perfectly delicious; I learned it from the locals while on a memorable travel adventure in Costa Rica and it is muy delicioso!  Whenever we bring this salad to a gathering, the bowl is empty in a flash.  Scoop it up with your favorite corn chips or serve it alongside tacos.  It is a very friendly salad and can be easily enjoyed with most any meal.

Ingredients

  • 2 cucumbers, diced (we like mini Persian best)

  • 2 avocados, cut in same size pieces as cucumbers

  • 1-2 limes

  • salt

  • abundant love

Directions

  • Combine cucumber and avocado, squeeze lime juice and sprinkle salt to taste.
  • So simple and delicious…enjoy!
