Amazing Vegan Chex Mix

One day my son was reading the back of the cereal box and saw a recipe for Chex Mix and asked if we could make some. With a little curiosity and inspiration, we found various recipes for homemade Chex mix and were inspired by one we found on the website “It Doesn’t Taste like Chicken“. We modified and added our flair and share it here with you. It’s easy to double the batch (you need a BIG mixing bowl) and make enough to last beyond the day, haha. This mix is gobbled up quickly in our household. We hope you love it too!

Irresistible Chex Mix!

Ingredients

  • The Mix
  • 6 cups rice chex cereal*

  • 1 cup cheerios*

  • 2 cups pretzel sticks*

  • 1 pack INKA corn nuts (Chile Picante is our favorite flavor)

  • abundant love

  • Seasoning
  • 1 Tablespoon nutritional yeast

  • 1 Tablespoon apple cider vinegar

  • 1 Tablespoon soy sauce

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon garlic powder

  • 1/4 cup vegan butter (we love Miyoko’s best)

Directions

  • Preheat your oven to 250F.
  • Combine the cereals and pretzels (not the corn nuts yet) in a large mixing bowl and set aside.
  • Add all the seasonings to a small pot and melt slowly over medium-low heat (3 setting is great) to keep from burning. Mix often.
  • Pour the seasoning over the cereals while mixing to coat evenly.
  • Spread the mixture evenly on the pan and bake for 45-50 minutes, stirring every 15 minutes. The mix should be crispy and evenly golden when done. Remove from the oven and add the corn nuts, mixing them with the rest of the Chex mix. Let it all cool before serving and store the mixture in an airtight container.

Notes

  • * We bought our cereals and pretzels from Aldi, which are vegan: Milleville brand rice squares (chex cereal), Milleville brand Crisp Oats (cheerios), and Clancy brand pretzel sticks. To note, one box of rice chex will be perfect for a double batch of chex mix!
  • ** INKA Cornnuts are our favorite, but other brands of corn nuts are great too. Trader Joe’s has some great corn nuts as well.
