Baklava

My sweet friend, Sue taught me how to make this beloved Baklava. She had returned from travels in Turkey where she learned the secrets to amazing Baklava. I have made just two substitutions to her recipe to accommodate the vegan life and if I hadn’t told you, you’d never know. The best thing about this dish is that every person in my family loves it! Every single one of us…how often does this happen, less often than I’d like, haha.

Ingredients

  • Phyllo dough – 18 sheets (we use the Fillo Factory brand)

  • 2 sticks (1 cup) Miyoko vegan butter

  • 6 Tablespoons brown rice syrup

  • 2 Tablespoons pure maple syrup

  • 3/4 cup organic white sugar

  • 3/4 cup water

  • 1″ cinnamon stick

  • juice of 1/2 lemon, about 2 Tablespoons

  • 1 ” orange rind (tangerine works too)

  • 1 1/2 cups raw walnuts

  • 3/4 cup salted pistacios

  • 3 Tablespoons organic white sugar

  • 1 1/2 teaspoon cinnamon

Directions

  • Grind nuts in a food processor until very small: this can be done before the baking day and stored in an airtight container if you’d like. On baking day, add the sugar and cinnamon and combine well.
  • Melt the Miyoko (or, favorite vegan brand) butter and set aside.
  • On the stovetop, with low-medium heat, combine brown rice syrup, maple syrup, sugar, and water. Add the cinnamon stick, lemon juice, and orange rind and bring to a boil. Cook a few minutes longer to allow the mixture to thicken a bit.
  • Once the mixture has thickened, remove from the heat, remove the orange rind, and let it cool. Preheat oven to 350. After 30 minutes of cooling, remove the cinnamon stick.
  • Once cooled, it’s time to layer the baklava: with pastry brush, butter the bottom of the baking pan, layer phyllo, butter, phyllo for 7 layers, then spread half the nut mixture as the next layer. Continue with the phyllo, butter for 4 layers, then spread the next half of the nut mixture and finally, another 7 layers of phyllo/butter, topping with butter.
  • Cut on the diagonal through 1st nut layer only. This video is helpful.
  • Bake the baklava for 30 minutes at 350 until golden brown.
  • Remove from the oven and pour the cooled syrup evenly over the top of the baked baklava.
  • Cut through all the layers and try to resist eating the entire pan!
