Easy Vegan Ravioli Dinner

Some nights, taking the easy way is the best way. These store-bought ravioli simply drizzled with extra virgin olive oil and topped with our easy homemade parmesan comes together in just a few minutes. Top with avocado or serve with a salad. Easy way dinner, yes!

Ingredients

  • Your favorite store-bought Ravioli *

  • Extra-virgin olive oil

  • Vegan Parmesan Cheese
  • 1/3 cup raw cashews

  • 1 1/2 Tablespoons Nutritional Yeast

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon salt

  • 2 Tablespoons macadamia nuts (optional)

  • salt and pepper to taste

Directions

  • Prepare the ravioli according to the package instructions. (We love Trader Joe’s Vegan Spinach & Cashew Ravioli, it cooks up in 4 minutes)
  • While the water is coming to a boil, toss all the “cheese” ingredients into your food processor and blend until it has the texture seen in the image. Please don’t over mix. Store in an airtight container in the fridge.
  • Drain the ravioli, toss with a bit of olive oil and top with your vegan parmesan and sprinkles of salt and pepper to taste. If interested, top with sliced avocado too. Done, easy! Enjoy.
