Good morning, Coffee Cake

“It smells like cinnamon rolls.”

I made my very first coffee cake yesterday and it was a hit! This recipe is easy and made with ingredients you likely have on hand. When we shared the cake with a friend, they raved and insisted it should not be the last time we make this cake.

Inspired by their enthusiasm, I’m posting it here today so you can enjoy this moist and delicious cake too.

The best coffee cake (and, it’s vegan)!

Ingredients

  • Cake
  • 1/2 cup applesauce (unsweetened)

  • 1 cup safflower oil

  • 1 1/4 cup almond milk (or, your favorite plant-based milk)

  • 1 Tablespoon vanilla extract

  • 3 cups all-purpose flour

  • 1 cup white sugar

  • 1 Tablespoon baking powder

  • 1/2 teaspoon salt

  • Cinnamon Swirl
  • 1 1/4 cups packed light brown sugar

  • 1 Tablespoon ground cinnamon

  • 1/3 cup unsalted Miyoko vegan butter, melted *

Directions

  • Preheat the oven to 350 F.
  • Lightly grease a 9 x 13-inch baking dish and set aside (we used coconut oil).
  • In a small bowl, combine the light brown sugar and the ground cinnamon and set aside.
  • Next, in another small bowl, melt the Miyoko butter and also set aside.
  • In a large mixing bowl, combine applesauce, oil, almond milk, and vanilla.
  • In a medium mixing bowl, combine the flour, white sugar, baking powder, and salt.
  • Add these dry ingredients to the wet and mix well to make the batter (do not add the cinnamon swirl ingredients at this time).
  • Pour half of the batter into the greased pan. Sprinkle half of the cinnamon swirl on top of this batter. Carefully pour the remaining batter over the cinnamon swirl layer. Then, sprinkle the rest of the swirl mixture over the top.
  • Drizzle the melter Miyoko butter over the top.
  • Bake for 35 minutes, let rest for 10 minutes and serve warm. Enjoy! **

Notes

  • * Miyoko butter is the very best vegan butter. You may substitute another vegan butter if you’d like though.
  • ** 35-minute bake time was perfect; however, ovens vary so be sure to do the “toothpick test”. Push a toothpick through the center of the cake and it should come out easily with no sticky and wet cake. Some crumbs on the toothpick are great, it just needs to be moist and not wet.
