Mediterranean Orzo Vegan Feta

Lunch with Hermes. Hermes is the God known as The Messenger, described as a trickster among other traits! The trick in this dish…vegan feta. I was called a liar (ahem) the first time I served it with this amazing vegan feta!

I love this dish for many reasons, including…pretty easy to make, delicious, and very easy to pack for lunch because it tastes best at room temperature. And, a couple of optional additional ingredients take it to just another level of yum. Enjoy!

Mediterranean Orzo Vegan Feta

INGREDIENTS

  • 6oz dry gluten-free or regular orzo pasta

  • 1-1/2 cups grape or cherry tomatoes, rinsed and sliced in half

  • 1/4 cup pitted kalamata olives, sliced

  • 1/2 cup crumbled feta cheese

  • 1/4 cup fresh chopped Italian parsley

  • 2 Tablespoons capers

  • Optional: julienned sun-dried tomatoes and garbanzo beans *

  • Lemon Dressing
  • 1/4 cup fresh squeezed lemon juice

  • 1 clove crushed garlic

  • 1 teaspoon pure maple syrup

  • 1/2 cup extra-virgin olive oil

  • salt & pepper (a bunch) to taste

Directions

  • Prepare orzo according to the directions on the package, drain, and set aside to cool slightly.
  • Prepare lemon dressing.
  • Chop tomatoes, olives, and Italian parsley. *
  • Combine cooked pasta with the rest of the ingredients (except the feta) then drizzle with enough dressing to coat. Toss then mix in the feta. Serve, or refrigerate until ready to serve.

Notes

  • * Optional additional ingredients: julienned sun-dried tomatoes and/or garbanzo beans.
