This refreshing salad is easy and delicious, two of my favorite recipe characteristics! Inspired by my brilliant friend, Kirsten who one evening, as we were preparing a spicy curry dinner together suggested a cool cucumber salad as a compliment. Cool as a Cucumber

3 (about 1 1/2 cups) organic cucumbers, thinly sliced*
1/2 shallot, thinly sliced
1/2 carrot, grated
2 Tablespoons rice vinegar
1/2 teaspoon pure maple syrup
1/2 teaspoon toasted sesame oil
1/4 teaspoon crushed red pepper
dash of salt to taste
toasted sesame seeds

Directions
- Combine dressing ingredients into a mason jar and shake well.
- Drizzle dressing over the salad veggies, taste, adjust with more salt or crushed red pepper, if desired.
- Top with sesame seeds and enjoy!
Notes
- * Persian cucumbers are our favorite since they are thin-skinned and seedless. They are also smaller than traditional cucumbers.
