Cool as a Cucumber

This refreshing salad is easy and delicious, two of my favorite recipe characteristics! Inspired by my brilliant friend, Kirsten who one evening, as we were preparing a spicy curry dinner together suggested a cool cucumber salad as a compliment. Since this fateful evening, we have perfected the salad and ta da…here it is! Enjoy!

Ingredients

  • 3 (about 1 1/2 cups) organic cucumbers, thinly sliced*

  • 1/2 shallot, thinly sliced

  • 1/2 carrot, grated

  • 2 Tablespoons rice vinegar

  • 1/2 teaspoon pure maple syrup

  • 1/2 teaspoon toasted sesame oil

  • 1/4 teaspoon crushed red pepper

  • dash of salt to taste

  • toasted sesame seeds

  • abundant love

Directions

  • Combine dressing ingredients into a mason jar and shake well.
  • Drizzle dressing over the salad veggies, taste, adjust with more salt or crushed red pepper, if desired.
  • Top with sesame seeds and enjoy!

Notes

  • * Persian cucumbers are our favorite since they are thin-skinned and seedless.  They are also smaller than traditional cucumbers.
