Good morning, French Toast! This 5 ingredient recipe is so easy, and delicious, the kids can make it. Top with berries and drizzle with maple syrup if you’d like.
This past Mother’s Day, I had mixed up the simple ingredients the night previous and stored in an air-tight glass jar. Mother’s Day morning, the kids were able to bring me (and, Daddy) breakfast in bed. Next, will teach them to brew the coffee! 🙂
Easy Vegan French Toast

1 Tablespoon ground flaxseeds
4 Tablespoons whole wheat or all-purpose flour
1 teaspoon cinnamon
2 cups almond milk (or, your favorite non-dairy milk)
1/2 loaf of your favorite crusty bread – sliced

Directions
- In a 4-cup pitcher or container, combine the ground flaxseeds, flour, almond milk, and cinnamon. Whisk or blend well with an immersion blender until all ingredients are well combined.
- Let the mixture rest for 10 minutes, then pour it into a shallow dish. A pie pan or 8×8 dish works well. Place your fry pan (we like cast iron) on medium heat during this time.
- After 10 minutes, coat the bottom of the pan with your favorite high-heat oil. We like safflower (grapeseed and coconut oils work well also). Place a few pieces of the bread in the mixture and coat both sides.
- Place the coated bread onto the hot pan and cook until lightly browned (2-3 minutes) then, flip and cook the second side.
- Serve with fresh berries and, or maple syrup. Enjoy!
