Tacos, Mommy!

When our neighborhood pool opens for the summer, we are all smiles since most of our summer days are spent swimming! One afternoon during the last week of school, our daughter advocated for an afternoon at the pool. When mommy was reluctant because it was already late afternoon, and we had no plan for dinner yet, she countered, “Tacos, Mommy!” My heart melted.

Tacos are so easy, versatile, and well-loved by everyone in our home, we are prepared to serve them for any meal. At the start of each week, I make a fresh batch of refried beans and also, black beans. Onions are diced and other veggies are prepped and kept on hand as well…more about weekly prep in another post. Today, we wanted to share how easy and affordable it is to be ready for spontaneous adventure by being taco ready with homemade beans! 🙂

Black and Refried Beans

Easily prepare black or refried beans for tacos.

Ingredients

  • 2 cups dry beans, rinsed

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1 teaspoon salt (do not add until cooking is complete)

  • filtered water to cover the beans at least 2 inches

  • abundant love

Directions

  • Place all the ingredients, except the salt in your Instapot and cook (Black beans, 28 minutes: Pinto Beans, 38 minutes). *
  • Once done, they can rest up to 5 minutes, then vent. The pinto beans can rest longer if you like since we are going to mash them up as refried beans and it’s ok for them to get a bit mushy.
  • Remove the lid, drain half the liquid, and add 1 teaspoon of salt, mix well.
  • For the black beans: scoop beans into a glass container. We keep just some of the liquid so the beans do not get dry.
  • For the pinto beans: drain most of the liquid, keeping some in case you’d like to add a bit back. Using a hand immersion blender, mash the beans so they have the consistency of refried beans. If they are too thick, just add a bit of the liquid you had set aside. We do this all within the Instapot (less messy dishes). Taste, and add a little more salt, if desired.
  • Serve immediately and store the rest for tacos anytime!

Notes

  • * These beans can be cooked in a crockpot also, just remember to add the salt once cooking is complete.
We buy these beans at our local Aldi, the Pinto Beans cost less than $2.00 and the Black Beans are just over $2.00 per bag. We can make two batches of beans with each bag.
