Nothing says summer like popsicle juice dripping down your arm. Thanks to our good friend, Yenci, we have learned to make the perfect strawberry lemonade popsicles. We also found some popsicle molds we really like; they are easy to fill, easy to wash, and they are designed to catch the drips…so, you can enjoy the popsicle and avoid the drips. Strawberry Lemonade Popsicles

8 ounces fresh organic strawberries (about 14 strawberries)
6 Tablespoons freshly squeezed lemon juice
6 Tablespoons pure maple syrup*
16 ounces of filtered water

Directions
- Combine all ingredients into a high-speed blender, and mix thoroughly.
- Strain the mixture with a mesh strainer or cheesecloth.
- Pour the mixture into a pot and bring to a low boil, mixing continuously. Once it comes to a boil, please remove it from heat and let it cool completely.
- Once cool, pour into popsicle molds and put in the freezer overnight.
- Invite friends over to enjoy with you the next day. 😉
Notes
- * Please use pure maple syrup, we promise it matters! These popsicles are delicious made with maple syrup and plenty sweet; however, if you’d like to substitute 1/4 cup sugar, this is an option too.
