Homemade Granola

The only granola you need in your life. This recipe is so simple and tasty, that you will make it over and over again. Serve it over a thick frozen smoothie, atop your favorite yogurt, or covered with your favorite nut milk! Top with fresh fruit or shredded coconut for extra delight. We make double batches often, it freezes well too. Thank you for breakfast made easy.

Ingredients

  • 3 cups rolled oats (gluten-free if you wish)

  • 1 cup nuts and seeds (1/3 sunflower seeds, 1/3 pecans, and 1/3 sliced almonds are a great combo)*

  • 1/4 cup millet (or, shredded coconut or additional oats)

  • 1/2 cup pure maple syrup

  • 5 Tablespoons safflower oil**

  • 1/2 teaspoon vanilla extract

  • 1/2 teaspoon ground cinnamon

  • 1/2 teaspoon salt

Directions

  • Preheat the oven to 300 F.
  • Combine and mix oats, nuts, seeds, millet, cinnamon, and salt.
  • In a separate bowl, combine the maple syrup, safflower oil, and vanilla extract. Whisk until completely mixed.
  • Pour the wet mixture over the dry and mix well with a rubber spatula.
  • Spread evenly over a lined baking sheet.
  • Bake for 40 minutes, mixing twice during the baking process.
  • Remove from oven and allow to cool.
  • Enjoy and store the rest in an airtight container.

Notes

  • * Your favorite assortment of nuts and seeds will be great in this granola. Chopped cashews and walnuts have made it into our mix too! We really love shredded coconut in our mix, so feel free to sub for some of the nuts or millet.
  • ** Extra-virgin olive oil will work as well if you don’t have safflower oil on hand. We like safflower oil for its neutral (non) taste.
