Chocolate Strawberries

What is not to love here?! This recipe is so simple, tasty, and healthy! Yes, healthy…fresh strawberries are full of vitamin C and also contain impressive amounts of manganese, potassium, and folate.

Chocolate has a powerful variety of antioxidants and is rich in other minerals too.

These strawberries are always well loved and pretty easy to make too! Sweet.

Ingredients

  • 16 ounces (1 lb) fresh organic strawberries, rinsed and pat dry

  • 1/2 cup vegan dark chocolate chips*

  • 1/2 teaspoon organic coconut oil

  • abundant love

Directions

  • Rinse the strawberries, gently pat them dry, and set aside on a clean dish towel.
  • In a small double boiler (ours has a 6″ diameter), put the chocolate chips and warm on medium-low heat until mostly melted, then add in the coconut oil and finish melting completely. **
  • Remove chocolate from the heat and place strawberries nearby, they are ready to mingle!
  • Holding each strawberry by the green tops, dip and coat with chocolate. Place on parchment paper lined dish or pan. Once all strawberries are dipped, place in the refrigerator to set the chocolate. Once the chocolate has firmed over the strawberry, enjoy and/or keep stored until you are ready to enjoy them.

Notes

  • * Most dark chocolate chips are vegan, just read the ingredient list carefully. We find very affordable chocolate chips at Trader Joe’s!
  • ** If you do not have a double boiler, no problem. Use a small pot and place a pan with about an inch or two of water on the burner underneath your small pot. The chocolate will go into your small pot and ta-da…makeshift double boiler.
